The grape variety “Baboso negro” has a very low grape yield, due to the delicate development of its usually small and compact clusters. The wine, produced with “Baboso negro” grapes cultivated in both El Hierro and Tenerife Islands, takes out of this combination its best minerality and balance. It overgoes a maischerung at 0º C, then is fermented at 25º C. Finally, aging takes place 12 months in French Allier oak barrels.
