The 15 days maceration is followed by a 20 days fermentation at a controlled temperature of 20 ° C. Thanks to an aging of 6 months in French and American oak barrels, it achieves a perfect integration of its wood aromas, also combined with the unusual 24 months in the bottle before it enters the market, which helps to smooth its edges. The great minerality of these wines recalls very well the intense and rich volcanic soils and its history.
