The Tajinaste blanco Ecologico is made with the quality of the classic and well-known Tajinaste blanco seco and also from the Canarian white grape variety Listan blanco.
The Listan blanco is busch-trained cultivated at 930m altitude on the southwest slope of the island of Tenerife in Valle de Arriba in Santiago del Teide. The grape skins undergo a slight maceration for about 4 hours to preserve the highest quality tannins. After fermentation of the wine at low temperature, it is further processed for 5 months in steel tanks on its own lees as a batonnage with weekly stirring. This gives the wine a nice body and an extraordinary depth, which will be nicely perceived in the mouth.
The organic certification of the Tajinaste Blanco Ecologico was provided by the spanish CRAE "Comisión Reguladora de Agricultura Ecologica" - Regulatory Commission for Organic Agriculture
