Vinatigo Baboso negro

The grape variety "Baboso negro" has a very low grape yield, due to the delicate development of its usually small and compact clusters. The wine, produced with "Baboso negro" grapes cultivated in both El Hierro and Tenerife Islands, takes out of this combination its best minerality and balance. It overgoes a maischerung at 0º C, then is fermented at 25º C. Finally, aging takes place 12 months in French Allier oak barrels.

Spectacular! The real discovery of the year

For me it was a real surprise to discover this wine. Its aroma and intense flavour caught me from the first sip. It´s an excellent wine for both meals and desserts (especially I love to drink it with chocolate) and yet it is not a sweet wine. The wine has a perfect combination with meat dishes, but the last time, I drank it with a hake baked with a sauce of seafood. Simply amazing.
If you want to discover a red wine with a marked difference compared to the rest, I recomend this excellent wine.
